

I was uber-proud of my recipe that I just made up on the fly. Okay it is loosely based on a salad that Fresh Market carries at their pre-made gourmet deli counter, but I can't seem to find a recipe similar enough to it...so I made one up. I highly recommend you try this light, healthy and delicious Summer Fresh Succotash Salad for your next gathering {or meal}.
Succotash (from Narragansett msÃckquatash, "boiled corn kernels"[1]) is a food dish consisting primarily of corn and lima beans or other shell beans.[1] Other ingredients may be added including tomatoes[2] and green or sweet red peppers.[3] Because of the relatively inexpensive and more readily available ingredients, the dish was popular during the Great Depression in the United States.
There are 3 main ingredients and the rest can be left up to your own taste buds to jazz it up to your liking. All measurements are approximations.
One bag of frozen, shelled edamame, thawed

Half bag of frozen corn, thawed

One 14 oz. can of diced tomatoes, drained

Summer Fresh Succotash Salad
One bag of frozen, shelled edamame, thawed

Half bag of frozen corn, thawed

One 14 oz. can of diced tomatoes, drained

Summer Fresh Succotash Salad
1 (12 oz) bag of frozen shelled edamame, thawed
6 oz. frozen corn kernels, thawed
1 (14 oz) can of diced tomatoes, drained
1/2 cup of red onion, diced
1/4 cup of chopped green onions
1-2 Tbsp. of cilantro
Juice of 1 fresh squeezed lime
Juice of 1/2 fresh squeezed lemon
2 Tbsp. of olive oil
1 Tbsp. of vinegar
1 1/2 tsp. of kosher salt
1/2 tsp. of garlic salt
1/4 tsp. of coarse ground black pepper
Mix everything together, chill and allow to marinate about 4-6 hours.
*Shortcut hint - buy the pre-chopped red and green onions in the produce section and save time and tears!

Yummy. How were you blogging last night when we were still at a party together at this time?!?! We watched The Blind Side after LE went to bed....have you seen that? Holy moly. Such a good movie. Reminded me of why we dedicate so much of our lives to volunteerism. That kid is the perfect example of the kids we impact.
