The Journey Begins

In case you haven't seen my status post on Facebook, my father-in-law, Roger, started his ride across America this weekend. Not only is he biking 100+ miles a day for a total of 3200 miles in 30 days, but he is doing it to help raise money for the victims of the Gulf Coast oil spill. If a 66-year-old riding his bike for 3200 miles in 30 days isn't enough to make you feel inadequate, fat and lazy, you should really try diving into this spinach artichoke dip! I got the inspiration for this from a ladies lunch to the new Avenue restaurant here in Tallahassee.

It probably could use a little tweaking, but it's pretty delicious in the first draft and also pretty low calorie. If you are feeling like taking it up a notch, add your own twist from here {I'm thinking cream cheese or parmesan cheese} ... I know I will be experimenting.

Simple Spinach and Arti Dip
2 jars of marinated artichoke quarters, drained
2 roma tomatoes, peeled and diced
1 package of frozen creamed spinach
salt and pepper to taste
8-10 flour or corn tortillas
canola oil

Cut the tortillas into wedges. Drop into hot canola oil and cook a minute or so on each side until browned. Drain and cool on paper towels.



Microwave the creamed spinach according to package directions. Mix with artichokes and tomatoes. Add salt and pepper to taste. Microwave the mixture for 2-3 minutes just before serving.



Enjoy and be thankful it's healthy and you don't have to ride your bike 3200 miles to work off the fat and calories!!
